Whiskey Was Great
Had the top shelf whiskey flight and the brisket sliders. The whiskey was great. For a young distillery they’re making a fine product. The brisket sliders were excellent. The cilantro and pickled red onions is a nice touch. The staff were awesome.

Pleasantly Surprised
Nice little spot in downtown San Antonio nor far off river walk. Staff is super friendly and talked up the town as well as the distillery itself. Ordered an old fashioned with a bourbon base and was pleasantly surprised by the overall presentation. Cozy tasting room with good live music onside when I was in. Really liked the exposure to see the distillery equipment, and loved the warm atmosphere. Only gripe was overall noise level in the place, and lack of clear direction of where to go to order or sit.

Maverick Distilling works especially well when you want something a little more polished without losing the local feel.
Being steps from the Alamo makes it convenient. And the restored bank building gives the tasting room a more elevated feel than a standard bar.
But the bigger draw for me is that the spirits are distilled on-site using 100% Texas-grown grains. I also appreciate the seasonal cocktail program because it keeps repeat visits from feeling too predictable.
What stands out most is the grain-to-glass identity. Everything feels rooted in Texas, and it’s an easy stop to pair with other downtown plans, like booking trips with tour operators in San Antonio.
The only real downside is the food selection. It’s more of a drinking destination than a full meal spot, so I would eat beforehand if you plan on staying for a flight and cocktails.

Experience Was Fantastic
Went to Maverick Distillery for my birthday. We did a distillery tour, followed by a tasting, and then went up to the bar on the third floor for a cocktail. EVERY SINGLE ASPECT of this experience was fantastic. The hospitality of the staff, the knowledge/expertise of our guide, and the history/roots of this establishment, were incomparable. Great Atmosphere
We stopped by Rebecca Creek for the first time, planning to enjoy just one drink. By chance, we were invited to participate in a bourbon tasting and a distillery tour hosted by Steve Ison. It ended up being one of the highlights of our trip. The atmosphere was fantastic, the grounds were beautiful, and the staff was warm and welcoming. We learned a great deal and had a memorable experience. Great atmosphere.

Very Unique Location
Very unique location for small to medium sized group events. Our organization booked a farewell dinner and the staff were kind, helpful and attentive. Chapline Distillery is the place I would pick when I want a quieter tasting without the bigger downtown crowd. It leans into a smaller, more intimate setup, and that works in its favor if you care more about the bourbon in your glass than a packed social scene.
The focus on single-barrel selections comes through right away. The spirits are well regarded for their rich flavor and smooth finish. And the tasting room feels like a comfortable place to slow down and actually talk through what you’re drinking.
I am also a fan of how craft-focused the whole visit feels. It never comes across like mass production, and that smaller-scale approach makes the experience feel more personal.
The downside is the location. Because it sits out in Bulverde, ride shares from downtown San Antonio can get expensive fast. It’s better for visitors who already have a car.
